A soccer night favourite, Sizzling Steak Fajitas can be prepared well ahead of time.
You’ll Need
- 1½ – 2 lb sirloin or striploin steak
- 2 cloves garlic, minced
- ¼ cup freshly squeezed lime juice
- 3 Tbsp grapeseed oil
- 2 tsp cumin or chili powder
- ½ large red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 pkg. whole wheat tortillas
- 1 avocado, pitted and chopped
- 1 tomato, chopped
- Sour cream and salsa
- 3 Tbsp fresh cilantro, chopped
- ½ cup Cheddar cheese, shredded
Prep and Cook
- 1Marinate beef in large resealable bag with garlic, lime juice, 2 Tbsp grapeseed oil and chili powder for at least two hours. (If it's soccer night, 10 minutes is fine too.)
- 2Preheat barbeque or heavy grill pan to medium-high heat (or until smoking).
- 3Remove beef from marinade and cook each side for approximately 4 minutes, or until beef is cooked medium rare.
- 4While beef is cooking, add 1 Tbsp grapeseed oil to large non-stick skillet and quickly stir-fry red onion, red and yellow peppers.
- 5Transfer steak to a cutting board and let it sit for a few minutes.
- 6Wrap tortillas in tinfoil and warm them in a preheated oven or on the BBQ for 1-2 minutes.
- 7Slice beef into thin strips.
- 8Divide beef, onions and grilled peppers among the tortillas.
- 9Serve fajitas with sides of chopped avocado, sour cream, salsa, cilantro and cheddar cheese.
- 10Once filled, roll up the tortilla and serve with a green salad and/or steamed veggies.
