Roasted Butternut Squash Recipe - SavvyMom

Roasted butternut squash could be one of the easiest (and most delicious) sides ever. Eat as its own thing or use in so many delicious recipes. You’ll “squash” any fear (yes, we went there) of handling these intimidating vegetables by doing this only once.

Serves 4-6

Roasted Butternut Squash Recipe:

You’ll Need

  • 1 large butternut squash, peeled and sliced into wedges
  • 2 tbsp olive oil
  • 1 tsp sea salt flakes
  • freshly cracked black pepper

Prep and Cook

  • 1
    Preheat oven to 400 F.
    Line a large baking sheet with parchment paper.

    Place squash wedges in a large bowl.
    Drizzle in olive oil and sprinkle with sea salt and freshly cracked black pepper.
    Toss to coat well.

    Transfer to baking sheet and spread wedges evenly.
    Bake for 40 - 50 minutes until squash is tender and golden around the edges.
    Serve immediately.
