Serves 4
You’ll Need
- 4 navel oranges
- 2 Tbsp olive oil
- 1 tsp honey
- 1 tsp Dijon mustard
- 1 clove garlic, grated
- 1 Tbsp Greek yogurt
- Kosher salt and fresh ground pepper
- 6 cups baby mixed greens
- ¼ cup pumpkin seeds, plus extra for garnish
- ¼ cup dried cranberries
- ¼ cup crumbled feta cheese
Prep and Cook
- 1Set a sieve over a large bowl. Slice ½-inch off the top of the oranges and carve out the pulp over the sieve, collecting the juice in the bottom of the bowl. Slice enough off the bottom of the orange so it won’t roll when placed on a plate.
- 2Using a sharp paring knife, cut a jack-o’-lantern face on the front of each orange.
- 3Drain off ¼ cup of the orange juice and whisk together with the olive oil, honey, mustard, garlic and yogurt. Season well with salt and pepper and set aside.
- 4Chop the orange pulp into bite-sized chunks and place in a large bowl. Remove any excess pith. Add salad greens, pumpkin seeds, dried cranberries, feta cheese and 2-3 tablespoons of the dressing. Toss to combine.
- 5Stuff the orange shells with the salad and garnish with the extra pumpkin seeds and dressing, if desired.
