‘Tis the season for simple gatherings of the sweetest sort! Mother’s Day is coming up, of course, but it’s also the time of year for backyard garden get-togethers, baby and wedding showers, ladies’ lunches, and porch parties. It’s when we invite a friend over for salad for lunch or treat our moms to a homemade dinner to give them a break from their own daily cooking.
I love this time of year for feeding others because the menu can, and should be, fresh and simple. Tea sandwiches and salads are perfect for all of the occasions I listed above (maybe not dinner) and when served with something served from a pitcher—lemonade, iced tea, sparkling sodas, etc.—the meal instantly becomes a little more special. Making an unexpected homemade drink is wonderful way to treat your guests to something other than juice or soda. It’s also healthier and less expensive than anything you might pick up in the store.
I keep a few bottles of mango, peach, and pear nectar in my pantry, stocking up whenever I find them on sale. When mixed with some brewed tea, which costs pennies to make, you’re left with a specialty drink that can chill in the refrigerator while you wait for your guests to arrive.
Good to Know:
- Mango nectar is widely available in most major supermarkets.
- Using frozen mango cubes in place of ice keeps the drink chilled without watering it down. You can eat the mango at the bottom of the cup when you finish your drink, if desired. If you prefer, use regular ice and garnish the drink with fresh mango slices.
- Feel free to replace the green tea with raspberry herbal tea or regular black tea. Or a scoop of matcha for a superfood treat.
Iced Mango Green Tea Recipe:
You’ll Need
- 6 cups water
- 4 green tea bags
- 2 cups mango nectar
- ¼ - ½ cup cane sugar
- Frozen mango chunks
- ¼ cup fresh mint leaves
Prep and Cook
- 1Bring water to a boil, turn off the heat and add the teabags.
Steep for 10 minutes and remove bags. - 2Add mango nectar and sugar, to taste, stirring until sugar is completely dissolved.
- 3Transfer to a pitcher and place in the refrigerator until completely chilled, about 2 hours.
- 4Place a few frozen mango cubes in each glass and top with chilled tea.
Garnish with mint leaves.
