You’ll Need
- 5 eggs, hard boiled
- 3 Tbsp mayonnaise
- 2 tsp grainy Dijon mustard
- 1 Tbsp fresh dill, minced
- ½ tsp kosher salt
- Fresh ground pepper
- 1 cup grated zucchini
Prep and Cook
- 1Peel the eggs, place them on a cutting board and give them a rough chop with a knife.
- 2Place the eggs in a bowl and add the mayo, mustard, dill, salt and a few grinds of fresh pepper. Mix well.
- 3Add the zucchini and fold into the egg mixture until combined.
- 4Serve in a small bowl with crackers or spread onto bread and make a sandwich.
