Makes 12
You’ll Need
- 12 cupcakes
- 1 cup vanilla icing
- Green sanding sugar
- Candy bunnies
- ½ cup coconut
- 1 cup chocolate icing
- ½ cup mini eggs
- Large piping bag
- Large star tip
Prep and Cook
- 1Place the star tip inside the piping bag and fill it with the vanilla icing. Pipe the icing counter-clockwise around the cupcake, starting and finishing in the centre.
- 2Sprinkle the green sanding sugar over the top and insert a candy bunny into the middle of the cupcake.
- 3Place the coconut in a skillet set over medium heat and cook, stirring frequently, until the coconut is mostly golden brown. Remove the pan from the heat and allow the coconut to cool completely.
- 4Place the star tip inside the piping bag and fill it with the chocolate icing. Pipe the icing counter-clockwise around the cupcake, starting and finishing in the centre.
- 5Scatter the toasted coconut over the tops of the cupcakes and press 3 mini eggs into the middle of each.
