Cranberry Pumpkin Loaf

It’s not a cake; it’s a loaf. So serve it as a Toddler Meal with a side of soup, chili or some fruit for a meal or snack. Any age will love it.

You’ll Need

  • 2 eggs, lightly beaten
  • 1 14oz can pumpkin puree
  • ¾ cup brown sugar
  • ¾ cup apple sauce
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 1 ½ cups fresh or frozen cranberries
  • ½ cup chopped walnut pieces (optional)

Prep and Cook

    Preheat oven to 350 degrees.

    Lightly grease 9" x 5" loaf pan.

    Whisk together eggs, pumpkin, brown sugar, apple sauce and vanilla in a large mixing bowl.

    In a second bowl, mix together dry ingredients and make a well in the centre.

    Pour the wet ingredients into the dry ingredients and fold in cranberries and walnuts.

    Pour into prepared loaf pan and bake for approximately 1 hour or until toothpick comes out clean.

    Cool before serving.

    Serve with a bowl of soup.
