This recipe is a great way to feed a crowd (or a couple of teenagers) after a sleepover without breaking the bank or requiring hours of time spent stoveside. Set your slow cooker on a timer before you go to bed, and you’ll have a mostly fuss-free meal (just as some fried eggs and toast) ready to go in the morning. For families who enjoy ‘breakfast for dinner,’ you can also prep this dish before work, leaving it to cook all day while you’re away. Round out the meal with some eggs and a fruit smoothie—we’re sure no one will complain!
You’ll Need
- 4-6 bacon strips
- 2 lbs. chopped red or yellow potatoes (no need to peel)
- 4-6 green onions, sliced
- Salt to taste
- ½ cup grated cheddar cheese
Prep and Cook
- 1In a medium skillet, sauté bacon until it starts to crisp. Using a slotted spoon, transfer bacon to a 4-6-quart slow cooker.
- 2Stir in potatoes, green onions and salt, then cover and cook on low for 5 to 7 hours or until the potatoes are tender.
- 3Scatter cheese over everything, toss to combine and replace the lid for 10 minutes.
