Serves 4
You’ll Need
- 4 Tbsp lemon juice
- 4 apples
- 2 cups mixed greens or leaf lettuce
- ½ cup cubed aged cheddar
- ½ cup pecans
- 1 Tbsp apple cider vinegar
- 2 Tbsp pure maple syrup
- 3 Tbsp olive oil
- ½ tsp Dijon mustard
- Salt and pepper
Prep and Cook
- 1Slice the tops of the apples and scoop out the insides using an ice cream scoop, melon baller or knife. Leave at least a ½” border around the apple. Fill a large bowl with ice water and add the lemon juice. Leave the apples in the water until you are ready to fill with the salad.
- 2In a small bowl, combine the mixed greens, cheddar cheese and pecans. In a small jar, place the vinegar, maple syrup, olive oil and mustard. Cover and shake well. Pour some of the dressing over the greens and toss to combine; season with salt and pepper.
- 3Remove the apples from the water and pat dry. Fill the cups with salad and serve.
