Batch cooking doesn't only apply to meat, and keeping a pot of cooked beans on hand is a surefire way to add a dose of healthy fibre and protein to your vegetarian meals. Often avoided because they are thought to be troublesome, cooking dried beans requires nothing more than filling a pot with water and letting it simmer on the stovetop all afternoon.
