Whether you’re hosting friends at home for a low-key New Year’s Eve celebration, or heading out to a party where you’ve committed to bringing a tasty nibble, I have the ideal three-ingredient, last-minute appetizer that’s guaranteed to be a crowd pleaser.
Bacon-wrapped dates stuffed with blue cheese are gluten-free, make-ahead hors d’oeuvres that delights everyone who tries them. They can be served straight from the oven, or on a platter and garnished with a light drizzle of honey if you feel like dressing them up a bit. Either way, they are quick cooking, easy to assemble and certain to become one of your go-to entertaining snacks.
Bacon-Wrapped Dates Stuffed With Blue Cheese
Makes 18
You’ll Need:
- 18 Medjool dates
- 18 1-inch thick chunks blue cheese
- 9 slices thick-cut bacon, cut into half crosswise
Prep and Cook:
1. Preheat the oven to 400°F. Pull the pits out of the dates and push a piece of cheese into each. Wrap a piece of bacon around each date and place, seam side down, on a parchment-lined baking sheet.
2. Secure with a toothpick and bake for 10 minutes, or until the bacon is cooked and the cheese is oozing out the middle.
Good to Know: If you aren’t a fan of blue cheese, Parmesan and sharp cheddar make a mighty fine substitute.
