Green Bean BundlesAssemble these delicious bundles the day ahead and throw them in the oven while you’re carving the turkey. (Just don’t add the sauce until you’re ready to cook them!)

You’ll Need

  • 10 slices bacon
  • ½ pound fresh green beans, trimmed
  • 4 tablespoons unsalted butter
  • ¼ cup brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce

Preparation

  1. Preheat oven to 375° F and line a 9″ x 13” pan with foil.
  2. Heat a large saucepan of water to boiling and add the green beans. Boil for 90 seconds. Drain and rinse with cold water. Arrange groups of 5 or 6 beans in the prepared pan and wrap each with a slice of bacon.
  3. Melt the butter in a small saucepan over medium-low heat. Add the sugar, soy sauce and Worcestershire sauce, and cook for 1 minute, stirring, until the sugar is melted. Brush mixture over the bean bundles. Bake about 15 minutes, until the bacon is cooked.

Pumpkin Spice Muffins
You’ll Need

  • 1 ¾ cups of all-purpose flour or whole wheat flour or a mix
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. ground ginger
  • ½ cup vegetable oil
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup brown sugar
  • ⅓ cup granulated sugar
  • 1 cup unsweetened pumpkin puree

Preparation

  1. Preheat oven to 375.
  2. Lightly grease a 12 cup muffin pan or line with paper muffin cups.
  3. In a medium bowl combine flour, baking soda, salt, cinnamon, nutmeg and ginger. Use a fork to make sure there are no lumps.
  4. In a large bowl, whisk together oil, eggs and vanilla.
  5. Add sugars and pumpkin, and mix. Add the flour mixture with a wooden spoon until just combined.
  6. Spoon batter into muffin pan and bake on the middle rack of your oven for 18 – 20 minutes.
  7. Test the centres of one muffin with a toothpick (it should come out clean).
  8. Let cool in pan for 10 minutes and then cool completely on a rack.

Good to know: These muffins freeze well.

Juliette’s Favourite ‘Thanksgiving Spice’ Swirls
We started making our own cinnamon buns because I was unhappy with the ingredients of ready-made cinnamon buns. For this time of the year we add a little ‘Thanksgiving Spice’ instead of just cinnamon, and make the dough in our bread maker!

We make these with our daughter and she helps every step of the way—from measuring ingredients to rolling out the dough, to making the topping, to eating the freshly baked swirls!

You’ll Need
Ingredients for Dough

  • ⅔ cup organic milk
  • 1 organic free range egg (slightly beaten)
  • ¼ cup organic sugar
  • 2 Tbsp organic butter
  • ½ tsp salt
  • 1 ¼ cup organic wholewheat pastry flour
  • 1 ¼ cup organic unbleached flour
  • 2 ½ tsp yeast

Add ingredients in order listed into baking pan. Select ‘Dough’ setting and start dough making process (takes around 2 hours).

Ingredients for Filling

  • 4 tsp organic sugar
  • 2 tsp ground cinnamon
  • ¼ tsp nutmeg (preferably freshly grated)
  • ¼ tsp allspice
  • ¼ tsp ground ginger
  • ¼ cup organic butter (at room temperature)

Mix dry ingredients together in a small bowl and set aside.

Preparation
When dough is ready, roll it out onto lightly floured surface into a 12” x 12” square. Using a rubber or silicon spatula, spread butter evenly over entire surface of rectangle. Then sprinkle the ‘Thanksgiving Spice’ mixture evenly across the rectangle.

Carefully roll up like a jelly roll and let the dough rest on the seam. Using a knife, cut into nine even width pieces. Set these nine pieces into a greased 9” x 13” baking pan. Cover and allow to rise for 30 minutes, or until doubled in size. Bake in a preheated 350F oven for 20 minutes or until lightly browned.

Ingredients for Topping

  • 3 Tbsp organic icing sugar
  • 2 Tbsp organic cream cheese
  • ½ tsp organic milk

Mix topping ingredients together until smooth. When swirls have cooled, spread topping onto swirls…and they’re now ready to be gobbled up!
