These roasted broccoli and sausage calzones are a hearty and healthy meal that’s packaged up nicely in an edible, and portable, parcel. You can take them on the road with you, pack them in a lunch, serve them with salad for dinner, or eat them for a snack.
Less saucy than their popular cousin, the pizza, but just as steamy and warm, they’re perfect for taking to go. I’ve been known to let the kids eat them en route to whatever sporting activity happens to fall over dinner hour instead of making a stop at a drive-thru along the way. Their portability also makes them perfect for tucking into school lunchboxes.
The filling can be made up to two days in advance and stored in the fridge for an even faster assembly on another night. Alternatively, they can be pre-made and frozen on a cookie sheet before being stashed in the freezer (add 10 minutes to the baking time if you do this). Or you can make a large batch and freeze the already-cooked leftovers. Pop them in the oven and bake for 20-25 minutes when you needed a quick, homemade meal.
