- Lightly grease your muffin tins even if they are non-stick.
- Silicone muffin cups are convenient but do not brown food in the same way as their metal counterparts. Use the baking time as a guide for doneness, not the colour of the food.
- Parchment paper muffin liners are made to fit all sizes of muffin tins and are ideal for most baked goods. They prevent crumbs from sticking and still allow the food to brown.
- Most muffin tin recipes should be left to stand for 5 minutes after baking. To help unmold, run a butter knife or wooden skewer carefully around the perimeter of the muffin to loosen it.
- Ice cream scoops are handy for creating even portions.
- If you do not have enough batter to fill all of the muffin cups, don’t leave them empty. Filling the empty spaces with water will help to evenly distribute the heat and prevent the muffin tin from warping.
- Muffins will be less likely to stick to the pan if it’s placed on a wet towel for 2-3 minutes as soon as it’s removed from the oven.
