When it comes to summer entertaining, I try to incorporate summer fruits into as much of my menu as possible. Berries hold place of pride at the dessert table, and often come enveloped in crisp pastry or a humble pie, finished with whipped cream or blanketed with a buttery and sweet oat crumble.
Cherries and stone fruits tend to make it into the main course of my meal, as I toss them with greens for a seasonal salad, or prepare fresh salsas to accompany grilled meats and fish. Melons can often be found in the appetizer course, as they pair nicely with almost anything you might find on a charcuterie platter: salty and soft cheeses, cured meats and olives.
One of my favourite summer appetizers is this melon, mozzarella and prosciutto skewer. Three simple ingredients can be slipped onto a wooden stick, seasoned with a touch of fresh ground pepper, and passed around to guests in less time than it would take to run to the store to purchase a store-bought snack. If you’re a little more organized than I am, you can also make them a few hours in advance and store them in the fridge until needed, although if you do this, I would bring them to room temperature at least 30 minutes before serving as that will improve their flavour.
