I’ve never been a fan of breakfast in bed. I can’t stand the thought of crumbs scattered over the bed sheets, and feel that it’s so awkward to try and eat while partially lying down. In theory, it seems cozy and sort of special, but one slip of the spoon and cereal or syrup is likely to be dribbling down the pillows and into the space where we sleep. No, thank you.
Instead, I prefer to take a birthday or special occasion breakfast to the table, and do so quite frequently. It’s not too difficult to make an everyday food extraordinary, and that’s exactly what this pancake birthday cake is. A quick look through Pinterest tells me that this is especially popular with funfetti pancake batter, but for simplicity sake (remember, that’s a party trend this year) I just use my regular pancake recipe, and jazz it up with fresh berries, whipped cream, sprinkles and candles.
This is what I’ll be serving my boys for their birthday breakfasts this year. It’s time to add a few new rituals into our routine now that we have a new family member who’s old enough to participate in our traditions. We call him a ‘pancake monster’ and I can’t wait to see his face when he’s presented with this massive sharable stack on his second birthday next month.
