1. Balsamic Roasted Cherry Tomatoes

2. Kale, Grilled Corn & Avocado Salad
Here we’ve used kale as the base in this fabulous summer salad. Quick and easy to make, but loaded with seasonal summer ingredients like corn, vine tomatoes, and avocado, once you make it, you’ll make it again and again and again. Just don’t say we didn’t warn you!
3. Smashed Fingerling Potatoes with Lemon & Thyme
Roasted potatoes are too been there, done that, and mashed potatoes are a winter staple we’d rather not think about until next winter. Enter our most delicious potato side dish, perfect for any summer bbq or party. Simply boil buttery fingerling potatoes in salted water and drain well. While still warm, drizzle with olive oil and add lots of sea salt, fresh thyme, and lemon zest. Smash potatoes roughly with a large fork or masher, until broken apart but still chunky. Turn into a casserole dish and sprinkle top with Parmesan cheese. Bake for a few minutes in a hot oven until top is golden. Serve immediately.

The prettiest – and arguably the simplest – salad you will make this summer, it’ll go perfectly with any grilled fish, chicken, pork or steak.

6. Rustic Panzanella Salad
Crusty toasted bread (that soaks up all the lemony vinaigrette,) fresh juicy cherry tomatoes, crunchy cucumbers and pepper, silky buffalo mozzarella and fragrant basil leaves, all come together beautifully in this fast and fresh salad. Our tip? Let it sit in the fridge for 30 minutes before serving to let all the flavours mingle. Perfect served with some grilled fish or chicken.
