It’€™s the season of serving hamburgers and sandwiches for dinner (hurray!), and what goes better with either one than a generous helping of French fries? Little kids and big kids alike love them, and quite frankly the adults do, too, so it’€™s not surprising that we find this popular side dish on the dinner table more often than we care to admit.

Luckily, we have a few (healthy) alternative ideas and recipes that can easily be whipped up at home in your own kitchen. These colourful variations just might make your kids forget about the French fries altogether, and even if they don’€™t, you’€™ll have a few new veggie-based side dishes to add to your weeknight recipe repertoire.

Oven-Roasted Beet Chips: Crisp and colourful, these brightly hued oven-roasted root veggies are a popular replacement for traditional potato chips.

Kale Chips: Transform this superfood into a crisp and slightly salty snack that kids are guaranteed to adore.

Green Bean Fries: Add a coating of crisp nuts and tender panko to green beans and turn them into ‘fries.’

Zucchini Chips: This summer pile the dinner plates high with homemade zucchini chips. To make them, slice a medium zucchini into ¼-inch thick coins and brush both sides generously with olive oil. In a small bowl, combine 1/3 cup panko breadcrumbs, 1/8 teaspoon salt and 1/8 teaspoon dried dill weed. Dip the zucchini rounds into the breadcrumbs, pressing them into each side and lay them in a single layer on parchment-lined baking sheet. Bake at 450° for 20-25 minutes or until golden brown and crisp.
