Veggies, beans and cheese make Bedrock Black Bean Nachos a delicious snack the entire family can enjoy.
You’ll Need
- 1 can (15 ounces) black beans, drained and rinsed
- 1 bag Tortilla Chips
- 1 tomato, chopped
- 2 cups cheddar cheese, grated
- 1 cup lettuce, shredded
- ½ cup guacamole
- ½ cup sour cream
- ½ cup salsa
- 2 Tbsp fresh cilantro, chopped
Prep and Cook
- 1Preheat the oven to 375F.
- 2Spread a layer of tortilla chips along the bottom of a wide, parchment paper-lined baking pan or oven safe serving dish/platter.
- 3Place tortilla chips on top to make two or three layers.
- 4Sprinkle half of the beans over the tortilla chips and cover with half of the tomatoes and half of the cheese.
- 5Cover evenly with remaining nachos and tomatoes.
- 6Sprinkle remaining cheese evenly over the top.
- 7Bake in oven for 8-10 minutes, or until cheese is melted.
- 8Top with lettuce and chopped cilantro.
- 9Serve immediately with sides of salsa, sour cream and guacamole.
