There is just something so nice about waking up to a bowl of brown sugar oatmeal that is already ready and waiting for you in the fridge. All it takes is a few minutes of effort before you go to bed and you’ve got a healthy, hearty and delicious breakfast. Simply toss together some rolled oats with your choice of milk (we like almond and soy, but 1% will work too), some good-quality pure vanilla extract, a pinch of cinnamon and some demerara sugar in a jar. Then shake, shake, shake (to get those ingredients friendly), seal it up tight and place it in the fridge to soak overnight. In the morning, all you’ve got to do is remove jar from fridge, top with anything you fancy (think nuts, seeds, dried fruit or fresh juicy berries) and tuck in (or toss it in your purse to-go).

Ingredients:
For Oats:
1 cup thick cut rolled oats
1 tbsp chia seeds (optional)
1 cup milk (almond, soy or 1%)
1/2 tsp pure vanilla extract
1/2 tsp ground cinnamon
1 tbsp demerara sugar
Topping:
1/2 cup sliced almonds
1 cup berries (blueberries, raspberries or blackberries)
Demerara sugar for sprinkling
Recipe Directions:
- To make oats: The night before, combine the oats, chia seeds, milk, cinnamon, vanilla and sugar in a jar or container. Give it a good shake to combine all of the ingredients. Place in fridge to let flavours come together overnight.
- To assemble: In the morning, remove jar from refrigerator and stir well. Top with almonds, berries and demerara sugar. Eat immediately or toss in your bag to bring to work.
